A ham takes three or four years to reach the table
four years of care and craft that end in a two-second gesture.

Carving well is above all knowing how to read. Every piece is different — its curing, its grain, its level of salt — and must be interpreted: where the fat that perfumes lies and where the fat that is best trimmed away, which end to start from depending on whether it will be eaten in one night or over a month, and when to turn the piece. The maza is juicy and generous. The babilla is firmer, drier and more distinctive. The tip holds the salt of the entire curing process. Slices are cut to the exact size of a mouthful, thin enough to let the light through and trimmed so cleanly that they melt in the mouth. They are served at room temperature, never cold, because the marbled fat needs to begin melting before it reaches the palate. That is when the bright tear appears on the plate, together with the aroma of acorn and cellar and the sweet note that a good Ibérico leaves at the end. A ham well carved by hand is served almost at the pace at which it is eaten, and that slowness is part of the dish.

Professionally trained in Iberian ham carving, with years of experience providing service at events for leading hotel groups and representing major Spanish producers at trade fairs and product presentations.

Now working across Málaga and the Canary Islands, with the same knife and the same standards: choosing the piece, mounting it and carving it in front of the guests. What is served is explained — breed, curing and origin — in Spanish, English or German, because understanding what is on your plate makes the tasting even more enjoyable.

What happens on the day

The cut, step by step

I

Choosing the piece

Bellota, cebo de campo or cecina, depending on the event and the budget. Bought for your date, not pulled from storage.

II

Mounting and trimming

The stand is set up and the rind and outer fat removed. One hour before the first guest arrives.

III

Maza, babilla, contramaza

Each part has its own balance of salt and fat. The piece is carved in the right order so that it does not dry out.

IV

Slices to the plate

Bite-sized, around three fingers wide and almost translucent. Arranged as a rosette and always served at room temperature.

V

Clearing up

Whatever is left is vacuum-packed and stays with you, with the bone ready for stock. The area is left clean.

Hotels, groups and shopping centres

Gastronomy
as an art

Hand carving works as a floor attraction: guests stop, ask, photograph and come back. It is one of the few food activations that can support average spend, generate social content and communicate authentic Spanish product at the same time.

I work with F&B management on recurring services, one-off events or full seasons. Invoicing, health documentation and insurance are provided, with an agreed yield per piece so that the cost per portion remains predictable.

No travel surcharge in the province of Málaga, Lanzarote and Fuerteventura. For the rest of mainland Spain and the islands, travel is quoted separately and agreed in advance, with no surprises.
